For the Orange Cream Cheese Glaze:

  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • ½ teaspoon vanilla extract
  • 1 teaspoon orange zest

Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 9×5-inch loaf pan with parchment paper.

Step 2: Mix the Dry Ingredients

  • In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

Step 3: Prepare the Wet Ingredients

  • In a separate bowl, whisk together eggs, honey (or maple syrup), melted coconut oil, vanilla extract, and orange zest.

Step 4: Combine Everything

  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the grated zucchini and nuts (if using).

Step 5: Bake the Zucchini Bread

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Make the Orange Cream Cheese Glaze

  • In a bowl, beat the cream cheese, powdered sugar, orange juice, vanilla, and orange zest until smooth.
