- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 2 eggs
- ½ cup honey or maple syrup
- ⅓ cup coconut oil (melted) or vegetable oil
- 1 teaspoon vanilla extract
- 1 ½ cups grated zucchini (excess moisture squeezed out)
- ½ cup chopped walnuts or pecans (optional)
- Zest of 1 orange
For the Orange Cream Cheese Glaze:
- 4 oz cream cheese (softened)
- 1 cup powdered sugar
- 2 tablespoons fresh orange juice
- ½ teaspoon vanilla extract
- 1 teaspoon orange zest
Instructions
Step 1: Preheat and Prep
- Preheat your oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
Step 2: Mix the Dry Ingredients
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Step 3: Prepare the Wet Ingredients
- In a separate bowl, whisk together eggs, honey (or maple syrup), melted coconut oil, vanilla extract, and orange zest.
Step 4: Combine Everything
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the grated zucchini and nuts (if using).
Step 5: Bake the Zucchini Bread
- Pour the batter into the prepared loaf pan and smooth the top.
