Ingredients
For the Chicken & Marinade:

1 lb boneless, skinless chicken thighs or breast, thinly sliced

1 tbsp soy sauce

1 tsp sesame oil

1 tsp cornstarch
For the Yakisoba Noodles:

2 (5 oz) packs yakisoba noodles (fresh or pre-cooked, sauce packet discarded)

1 tbsp vegetable oil (or canola oil)
For the Stir-Fry:

2 cups shredded green cabbage
-
1 small carrot, julienned
-
½ onion, thinly sliced
-
½ red bell pepper, thinly sliced

2 green onions, chopped
-
2 cloves garlic, minced
-
1 tsp fresh ginger, grated
For the Yakisoba Sauce:

3 tbsp soy sauce
-
2 tbsp oyster sauce
-
1 tbsp ketchup
-
1 tbsp Worcestershire sauce

1 tsp sugar
For Garnish & Serving:

Toasted sesame seeds

Extra green onions

Pickled ginger (optional)
Instructions
Step 1: Marinate the Chicken
In a bowl, combine sliced chicken with soy sauce, sesame oil, and cornstarch.
Toss to coat evenly and let it sit for 10–15 minutes while you prep the rest.
Step 2: Prepare the Yakisoba Sauce
In a small bowl, whisk together soy sauce, oyster sauce, ketchup, Worcestershire sauce, and sugar.
Set aside for later.
Step 3: Soften the Noodles
If using pre-cooked yakisoba noodles, soak them in warm water for a few minutes to loosen.
Drain and gently separate them with your hands.
Step 4: Stir-Fry the Chicken
Heat 1 tbsp oil in a large wok or skillet over medium-high heat.
Add the marinated chicken and cook for 4–5 minutes until fully cooked and slightly browned.
Remove the chicken from the pan and set aside.
Step 5: Cook the Vegetables
In the same pan, add a touch more oil if needed.
Sauté onion, garlic, and ginger for about 1 minute.
Add cabbage, carrot, and bell pepper, and stir-fry for 3–4 minutes until tender-crisp.
Step 6: Combine Everything
Add the softened noodles to the pan with vegetables.
Return the cooked chicken to the pan.
Pour the yakisoba sauce over everything.
Toss well using tongs or a spatula to coat the ingredients evenly.
Stir-fry for another 2–3 minutes until everything is heated through and the sauce has absorbed.
Step 7: Garnish & Serve
Remove from heat and sprinkle with toasted sesame seeds and extra green onions.
Serve hot with pickled ginger on the side if desired.
