  • 4 salmon fillets (skin-on or off, your choice)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and black pepper, to taste
  • 1/2 cup chicken broth (or vegetable broth)
  • Juice of 1/2 lemon (for freshness)

Instructions

Step 1: Sear the Salmon

  1. Season the salmon fillets with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the salmon for 4-5 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.

Step 2: Make the Parmesan Cream Sauce

  1. In the same skillet, reduce the heat to medium and add butter.
  2. Stir in the minced garlic and sauté for 30 seconds until fragrant.
  3. Pour in the chicken broth and let it simmer for 1 minute to deglaze the pan.
  4. Add the heavy cream, parmesan cheese, and sun-dried tomatoes. Stir and let it simmer for 2-3 minutes, allowing the sauce to thicken.
  5. Toss in the spinach and cook until wilted, about 1 minute.

Step 3: Bring It All Together

  1. Return the salmon fillets to the skillet and spoon the sauce over the top.
  2. Let it simmer for 2 minutes to absorb all the flavors.
  3. Finish with a squeeze of fresh lemon juice for brightness.

Step 4: Serve & Enjoy!

  1. Plate the salmon and generously spoon the parmesan cream sauce over each fillet.
  2. Serve hot with your favorite sides!

Notes

Don’t Overcook the Salmon – It should be tender and flaky, not dry. Aim for an internal temperature of 130-135°F before resting.
