Ingredients
- 4 salmon fillets (skin-on or off, your choice)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional, for a little heat)
- Salt and black pepper, to taste
- 1/2 cup chicken broth (or vegetable broth)
- Juice of 1/2 lemon (for freshness)
Instructions
Step 1: Sear the Salmon
- Season the salmon fillets with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the salmon for 4-5 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
Step 2: Make the Parmesan Cream Sauce
- In the same skillet, reduce the heat to medium and add butter.
- Stir in the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth and let it simmer for 1 minute to deglaze the pan.
- Add the heavy cream, parmesan cheese, and sun-dried tomatoes. Stir and let it simmer for 2-3 minutes, allowing the sauce to thicken.
- Toss in the spinach and cook until wilted, about 1 minute.
Step 3: Bring It All Together
- Return the salmon fillets to the skillet and spoon the sauce over the top.
- Let it simmer for 2 minutes to absorb all the flavors.
- Finish with a squeeze of fresh lemon juice for brightness.
Step 4: Serve & Enjoy!
- Plate the salmon and generously spoon the parmesan cream sauce over each fillet.
