For the Casserole:

  • 1 lb ground turkey sausage (or turkey breakfast links, crumbled)

  • 10 large eggs

  • ¾ cup milk (or dairy-free alternative)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 1 bell pepper (any color), diced

  • 1 small onion, diced

  • 1 cup baby spinach, chopped

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ¼ tsp salt

  • Non-stick spray or a little butter for greasing

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13 inch baking dish with non-stick spray or a little butter. Set aside.

Step 2: Cook the Turkey Sausage

  1. In a large skillet over medium heat, cook the turkey sausage until fully browned, about 6–8 minutes.

  2. Break it into small crumbles as it cooks.

  3. Drain any excess liquid and remove from heat.

Step 3: Sauté the Vegetables

  1. In the same pan, add a drizzle of olive oil if needed.

  2. Sauté the diced onion and bell pepper for 3–4 minutes, until softened.

  3. Add chopped spinach and cook for another minute until wilted.

  4. Remove from heat and let cool slightly.

Step 4: Mix the Egg Mixture

  1. In a large mixing bowl, whisk together eggs and milk until well combined.

  2. Stir in garlic powder, onion powder, black pepper, and salt.

  3. Add the shredded cheddar and mozzarella cheeses, mixing gently.

Step 5: Assemble the Casserole

  1. Spread the cooked turkey sausage evenly in the prepared baking dish.

  2. Layer the sautéed veggies over the sausage.

  3. Pour the egg and cheese mixture evenly over everything.

  4. Use a spatula to gently press down and distribute ingredients.

Step 6: Bake the Casserole

  1. Place the casserole in the preheated oven.

  2. Bake for 30–35 minutes, or until the center is set and the top is golden.

  3. A knife inserted in the center should come out clean.

  4. Let cool for 5–10 minutes before slicing.

Step 7: Slice, Serve & Enjoy

  1. Cut into squares and serve warm.

  2. Top with hot sauce, salsa, or a dollop of Greek yogurt if desired.

  3. Add fresh herbs or avocado slices for extra flavor.
