  • 34 medium tomatoes, thinly sliced – Juicy and full of flavor.
  • ½ cup shredded mozzarella or Gruyère cheese – Adds a creamy, melty texture.
  • 2 tablespoons Parmesan cheese – For a nutty, salty touch.
  • 1 tablespoon olive oil – Helps the tomatoes caramelize beautifully.
  • 1 teaspoon balsamic glaze (optional) – Adds a hint of sweetness.
  • ½ teaspoon garlic powder – For a bit of savory depth.
  • ½ teaspoon dried oregano or thyme – Complements the tomatoes perfectly.
  • Salt and black pepper, to taste – Enhances all the flavors.
  • 1 egg + 1 tablespoon water (for egg wash) – Gives the pastry a golden finish.
  • Fresh basil or arugula (for garnish) – A fresh, peppery contrast.

Instructions

Step 1: Prepare the Puff Pastry

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll the thawed puff pastry on a lightly floured surface.
  3. Cut into 6 equal squares and place them on the baking sheet.
  4. Lightly score a border about ½ inch from the edges (don’t cut all the way through). This helps create a raised crust.

Step 2: Assemble the Tartlets

  1. Sprinkle shredded mozzarella or Gruyère onto each puff pastry square, staying within the scored border.
  2. Arrange tomato slices evenly over the cheese.
  3. Drizzle lightly with olive oil and balsamic glaze (if using).
  4. Sprinkle with garlic powder, oregano, salt, and pepper for extra flavor.
  5. Top with grated Parmesan for a crispy, cheesy finish.

Step 3: Bake Until Golden & Flaky

  1. In a small bowl, whisk together 1 egg + 1 tablespoon water to make an egg wash.
  2. Brush the edges of the puff pastry with the egg wash for a golden, glossy finish.
  3. Bake for 15-18 minutes, or until the pastry is puffed up and golden brown.

Step 4: Garnish & Serve

  1. Remove from the oven and let cool for a few minutes.
  2. Garnish with fresh basil or arugula for a pop of color and flavor.
  3. Serve warm and enjoy!

Notes

Use Ripe but Firm Tomatoes – Too juicy, and the pastry might get soggy. Pat them dry with paper towels before assembling.
Keep the Puff Pastry Cold – Cold dough bakes up flakier! If it gets too warm, pop it in the fridge for 10 minutes before baking.
Try Different Cheeses – Swap mozzarella for goat cheese or feta for a tangy twist.
Add Caramelized Onions – For extra sweetness and depth of flavor.
