Instructions
Step 1: Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, season with garlic powder, salt, and black pepper, and cook for 5-7 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
Step 2: Make the Sauce
- In a small bowl, whisk together pineapple juice, soy sauce, honey, rice vinegar, sesame oil, and ginger.
- In a separate small dish, mix cornstarch and water until smooth, then stir it into the sauce.
Step 3: Cook the Rice
- In the same skillet, add rice, chicken broth, and pineapple chunks. Bring to a boil, then reduce heat to low.
- Cover and simmer for 12-15 minutes until the rice is tender and liquid is absorbed.
Step 4: Combine Everything
- Return the cooked chicken to the skillet.
- Pour in the prepared sauce, stirring well to coat everything evenly.
- Let it cook for 2-3 minutes, allowing the sauce to thicken and absorb into the rice.
Step 5: Garnish and Serve
- Sprinkle with chopped green onions, sesame seeds, and red pepper flakes if using.
- Serve warm and enjoy every bite of this sweet and savory delight!
Notes
Use Fresh Pineapple – It adds extra juiciness and flavor, but canned works too!
Let the Sauce Thicken – Don’t rush this step! A thick sauce coats the chicken and rice perfectly.
Don’t Overcook the Chicken – It should be juicy and tender, not dry.
Customize It – Add red bell peppers, carrots, or even cashews for more texture and color!
