Toppings (Optional, but Highly Recommended!):

Instructions

Step 1: Cook the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with garlic powder, salt, and black pepper, and cook for 5-7 minutes until golden brown and fully cooked. Remove from the skillet and set aside.

Step 2: Make the Sauce

  1. In a small bowl, whisk together pineapple juice, soy sauce, honey, rice vinegar, sesame oil, and ginger.
  2. In a separate small dish, mix cornstarch and water until smooth, then stir it into the sauce.

Step 3: Cook the Rice

  1. In the same skillet, add rice, chicken broth, and pineapple chunks. Bring to a boil, then reduce heat to low.
  2. Cover and simmer for 12-15 minutes until the rice is tender and liquid is absorbed.

Step 4: Combine Everything

  1. Return the cooked chicken to the skillet.
  2. Pour in the prepared sauce, stirring well to coat everything evenly.
  3. Let it cook for 2-3 minutes, allowing the sauce to thicken and absorb into the rice.

Step 5: Garnish and Serve

  1. Sprinkle with chopped green onions, sesame seeds, and red pepper flakes if using.

Notes

Use Fresh Pineapple – It adds extra juiciness and flavor, but canned works too!
Let the Sauce Thicken – Don’t rush this step! A thick sauce coats the chicken and rice perfectly.
Don’t Overcook the Chicken – It should be juicy and tender, not dry.
Customize It – Add red bell peppers, carrots, or even cashews for more texture and color!
