For the Stuffed Chicken:

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

For the Filling:

  • ½ cup crumbled feta cheese
  • ⅓ cup sun-dried tomatoes, chopped
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
  • 1 clove garlic, minced
  • 1 tablespoon cream cheese (for extra creaminess, optional)

For Cooking:

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Instructions

Step 1: Prepare the Chicken

  1. Using a sharp knife, slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  2. Season the outside of the chicken breasts with salt, black pepper, garlic powder, and paprika.

Step 2: Make the Filling

  1. In a small bowl, mix feta cheese, sun-dried tomatoes, basil, garlic, and cream cheese until well combined.

Step 3: Stuff the Chicken

  1. Spoon the filling evenly into each chicken breast pocket.
  2. Secure the edges with toothpicks to keep the filling inside while cooking.

Step 4: Cook the Chicken

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add the stuffed chicken breasts and sear for 3-4 minutes per side, until golden brown.
  3. Cover the pan, reduce the heat to low, and cook for another 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 5: Serve & Enjoy

  1. Remove toothpicks (if used) and let the chicken rest for 5 minutes before serving.
  2. Garnish with extra fresh basil and serve warm.

Notes

  • Don’t Overfill – Too much filling may cause it to spill out while cooking.
  • Use a Meat Thermometer – Ensures the chicken is fully cooked without drying out.
  • Sear First, Then Finish Cooking – This locks in juices and adds flavor.
