For the Stuffed Chicken:
- 4 boneless, skinless chicken breasts
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon olive oil
For the Filling:
- ½ cup crumbled feta cheese
- ⅓ cup sun-dried tomatoes, chopped
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
- 1 clove garlic, minced
- 1 tablespoon cream cheese (for extra creaminess, optional)
For Cooking:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
Instructions
Step 1: Prepare the Chicken
- Using a sharp knife, slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Season the outside of the chicken breasts with salt, black pepper, garlic powder, and paprika.
Step 2: Make the Filling
- In a small bowl, mix feta cheese, sun-dried tomatoes, basil, garlic, and cream cheese until well combined.
Step 3: Stuff the Chicken
- Spoon the filling evenly into each chicken breast pocket.
- Secure the edges with toothpicks to keep the filling inside while cooking.
Step 4: Cook the Chicken
- Heat olive oil and butter in a large skillet over medium heat.
- Add the stuffed chicken breasts and sear for 3-4 minutes per side, until golden brown.
- Cover the pan, reduce the heat to low, and cook for another 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Step 5: Serve & Enjoy
- Remove toothpicks (if used) and let the chicken rest for 5 minutes before serving.
- Garnish with extra fresh basil and serve warm.

- Don’t Overfill – Too much filling may cause it to spill out while cooking.
