  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

For the Fruit Topping

  • 1 cup fresh peaches, sliced
  • ½ cup strawberries, sliced
  • ½ cup blueberries
  • ½ cup raspberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice

Instructions

Step 1: Prepare the Crust

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  2. Press the mixture firmly into the bottom of a springform pan to form the crust.
  3. Chill in the refrigerator for 15 minutes while making the filling.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and creamy.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Spread the filling evenly over the chilled crust.
  5. Refrigerate for at least 4 hours or until set.

Step 3: Prepare the Fruit Topping

  1. In a bowl, toss peach slices, strawberries, blueberries, and raspberries with honey and lemon juice.
  2. Let sit for 10 minutes to allow the flavors to blend.

Step 4: Assemble and Serve

  1. Once the cheesecake is fully set, arrange the fruit topping evenly over the cheesecake.
  2. Slice and serve chilled for a refreshing summer dessert!

Notes

  • Use Room Temperature Cream Cheese: This ensures a smooth, creamy filling.
  • Chill for Best Results: Let the cheesecake set for at least 4 hours (or overnight) before serving.
  • Make it No-Bake: Use a pre-made graham cracker crust and let the filling set in the fridge—no baking required!
  • Customize the Fruit: Swap in blackberries, cherries, or kiwi for a fun twist.
