Spinach & Cheese Omelette

  • 2 large eggs
  • 2 tablespoons milk (for fluffiness)
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup shredded cheese (cheddar, mozzarella, or feta work great)
  • 1 tablespoon butter or olive oil
  • Salt and pepper, to taste
  • 1/4 teaspoon garlic powder (optional, for extra flavor)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Instructions

Step 1: Prepare the Egg Mixture

  1. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder (if using) until well combined and slightly frothy.

Step 2: Sauté the Spinach

  1. Heat butter or olive oil in a non-stick skillet over medium heat.
  2. Add the chopped spinach and sauté for about 1-2 minutes until wilted. Remove from the pan and set aside.

Step 3: Cook the Omelette

  1. Reduce the heat to low-medium and pour the egg mixture into the skillet.
  2. Let the eggs cook undisturbed for 1-2 minutes, gently swirling the pan so the eggs cook evenly.

Step 4: Add Cheese & Spinach

  1. Sprinkle the sautéed spinach and shredded cheese evenly over one half of the omelette.
  2. Once the edges start to lift slightly and the center is mostly set, use a spatula to fold the omelette in half.

Step 5: Serve & Enjoy!

  1. Cook for another 30 seconds to let the cheese melt completely.
  2. Slide the omelette onto a plate and garnish with fresh herbs if desired.
  3. Serve warm and enjoy!

Notes

Use Fresh Eggs – The fresher the eggs, the better the texture and flavor.
Low & Slow Cooking – Cooking on low heat ensures a soft, creamy omelette without overcooking.
Don’t Overfill – Too many ingredients can make the omelette difficult to fold.
