  • 1 egg
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • 1 cup grated apple (any sweet variety, such as Honeycrisp or Fuji)
  • Cooking oil or butter (for the pan)
  • Maple syrup & extra cinnamon (for serving)

Instructions

Step 1: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and brown sugar.

Step 2: Prepare the Wet Ingredients

  1. In another bowl, whisk the egg, milk, vanilla extract, and melted butter (or oil) until combined.

Step 3: Combine and Fold in Apples

  1. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  2. Fold in the grated apple. Do not overmix—lumps are okay!

Step 4: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
  2. Pour about ¼ cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Step 5: Serve and Enjoy

  1. Stack the pancakes on a plate and drizzle with maple syrup.
  2. Sprinkle with extra cinnamon and serve warm!
