- 1 tablespoon brown sugar
- 1 egg
- ¾ cup milk
- 1 teaspoon vanilla extract

- 1 cup grated apple (any sweet variety, such as Honeycrisp or Fuji)

Instructions
Step 1: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and brown sugar.
Step 2: Prepare the Wet Ingredients
- In another bowl, whisk the egg, milk, vanilla extract, and melted butter (or oil) until combined.
Step 3: Combine and Fold in Apples
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Fold in the grated apple. Do not overmix—lumps are okay!
Step 4: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
- Pour about ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
