For the Shredded Chicken Gravy:

  • 2 large boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ½ cup milk

For the Mashed Potatoes:

 

  • 4 large russet potatoes (peeled and cubed)
  • ½ cup milk
  • ¼ cup unsalted butter
  • Salt and pepper (to taste)

Instructions

Step 1: Cook the Chicken

  1. In a pot, add chicken breasts and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until the chicken is fully cooked.
  2. Remove the chicken from the pot and shred it using two forks. Set aside.

Step 2: Make the Gravy

  1. In the same pot, melt butter over medium heat. Add chopped onion and garlic, sautéing until softened.
  2. Stir in the flour and cook for about 1 minute to form a roux. Slowly whisk in the chicken broth and milk until smooth.
  3. Add thyme, parsley, paprika, salt, and pepper. Bring to a simmer and let the gravy thicken.
  4. Stir in the shredded chicken and let it cook for another 5 minutes.

Step 3: Make the Mashed Potatoes

  1. While the gravy simmers, boil the potatoes in a pot of salted water until tender, about 15 minutes.
  2. Drain the potatoes and mash them with butter, milk, salt, and pepper until smooth and creamy.

Step 4: Serve and Enjoy!

 

  1. Spoon the mashed potatoes onto a plate and top with the shredded chicken gravy. Garnish with extra parsley if desired.

Notes

  • Use Rotisserie Chicken: If you’re short on time, shredded rotisserie chicken works perfectly.
  • Thicker Gravy?: Let it simmer longer or add a bit more flour.
  • Creamier Mashed Potatoes: Use heavy cream instead of milk for extra richness.
