Ingredients
For the Casserole:
3 cups cooked chicken, shredded or diced
1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
1 cup sour cream
1 cup shredded cheddar cheese
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp salt
For the Topping:
1 sleeve Ritz crackers (about 30 crackers), crushed
4 tbsp unsalted butter, melted
Optional Add-ins:
1 cup frozen peas and carrots
½ cup cooked broccoli florets
Chopped parsley for garnish
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Lightly grease a 9×13-inch baking dish and set aside.
Step 2: Prepare the Filling
In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper.
If using, fold in frozen peas and carrots or broccoli.
Step 3: Assemble the Casserole
Spread the chicken mixture evenly into the prepared baking dish.
Step 4: Make the Topping
In a small bowl, mix the crushed Ritz crackers with the melted butter until evenly coated.
Step 5: Top and Bake
Sprinkle the buttery cracker mixture evenly over the casserole.
Bake for 25-30 minutes, until the casserole is bubbly and the topping is golden brown.
