For the Tortellini & Steak:

  • 1 lb beef sirloin or ribeye, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)
  • 1 (20 oz) package cheese tortellini (fresh or frozen)

For the Cheesesteak Veggies:

  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 2 cloves garlic, minced

For the Creamy Provolone Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk (or heavy cream for extra richness)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese

For Garnish (Optional):

  • Chopped fresh parsley
  • Extra shredded provolone

Instructions

Step 1: Cook the Tortellini

  1. Bring a pot of salted water to a boil and cook the cheese tortellini according to package instructions.
  2. Drain and set aside.

Step 2: Cook the Steak

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season the thinly sliced steak with salt, black pepper, garlic powder, and smoked paprika.
  3. Cook for 2-3 minutes per side until browned and cooked through. Remove from the skillet and set aside.

Step 3: Sauté the Cheesesteak Veggies

  1. In the same skillet, melt butter over medium heat.
  2. Add onions, green bell pepper, and red bell pepper, and sauté for 4-5 minutes until soft.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.

Step 4: Make the Creamy Provolone Sauce

  1. In a saucepan, melt butter over medium heat.
  2. Whisk in flour and cook for 1 minute, stirring constantly.
  3. Slowly add milk, whisking to remove lumps. Cook until thickened, about 2-3 minutes.
  4. Stir in salt, black pepper, and Worcestershire sauce.
  5. Reduce heat to low and mix in shredded provolone and mozzarella, stirring until melted and smooth.

Step 5: Assemble & Serve

  1. Add the cooked tortellini and steak slices to the skillet with the sautéed veggies.
  2. Pour the creamy provolone sauce over everything and toss to coat.
  3. Garnish with extra provolone and parsley, then serve warm!

Notes

  • Use Thinly Sliced Steak – Ribeye or sirloin works best for tender, flavorful bites.
  • Don’t Overcook the Tortellini – Cook just until al dente for the perfect texture.
  • Make It Spicy – Add red pepper flakes or hot sauce for a kick!
  • Use Different Cheeses – Try white American cheese or gouda for a unique twist.
