Ingredients

For the Foil Packets:
1 lb thinly sliced beef (ribeye or sirloin)
1 large green bell pepper, sliced thin
1 large red bell pepper, sliced thin
1 large yellow onion, sliced thin
2 cups baby potatoes, halved or quartered
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp smoked paprika

For the Cheese:
1 ½ cups shredded provolone cheese (or mozzarella for a milder flavor)
4 slices cheddar cheese (optional for added sharpness)

For Assembly & Garnish:
4 large pieces of heavy-duty foil (about 12×12 inches)
Fresh parsley, chopped (optional)
Hoagie rolls or crusty bread (optional for serving)


Instructions

Step 1: Preheat and Prep
Preheat your grill to medium-high or your oven to 400°F (200°C).
Lay out four large sheets of heavy-duty foil.

Step 2: Season the Ingredients
In a large bowl, combine the sliced beef, bell peppers, onion, and potatoes.
Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, Italian seasoning, and smoked paprika.
Toss everything together until evenly coated.

Step 3: Assemble the Foil Packets
Divide the beef and veggie mixture evenly among the four sheets of foil.
Top each with a generous handful of shredded provolone cheese and a slice of cheddar if using.
Fold the foil over the mixture and seal the edges tightly to form a packet.

Step 4: Cook the Packets
Grill Method: Place foil packets on the preheated grill. Cook for 12–15 minutes, flipping once halfway through, until the beef is cooked and potatoes are tender.
Oven Method: Place packets on a baking sheet and bake for 20–25 minutes, until everything is cooked through.

Step 5: Open & Finish
Carefully open the foil packets (steam will escape) and check for doneness.
If you want more melty, bubbly cheese, add a little extra on top and broil for 2-3 minutes (oven only).
Sprinkle with fresh parsley before serving.

Step 6: Serve & Enjoy
Serve directly in the foil for easy cleanup, or transfer to a plate.
Add a toasted hoagie roll on the side if you want the full cheesesteak experience.
These also pair great with a simple salad or grilled corn on the cob.

Notes

Use Thin Beef – The thinner the slices, the faster and more evenly they cook.
