For the Brownie Layer:

  • 1 box brownie mix (plus ingredients listed on the box) or homemade brownies (see tips)
  • ½ teaspoon salt (if using a box mix, to enhance flavor)

For the Pecan Pie Filling:

  • 1 cup chopped pecans
  • ½ cup brown sugar
  • ¼ cup corn syrup or maple syrup
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 egg yolk

For the Chocolate Coating:

  • 2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening (for a smooth finish)

Instructions

Step 1: Prepare the Brownies

  1. Bake the brownies according to package instructions or your favorite homemade recipe.
  2. Let them cool completely, then crumble them into a large bowl.

Step 2: Make the Pecan Pie Filling

  1. In a small saucepan, melt butter over medium heat.
  2. Stir in brown sugar, corn syrup, vanilla, and salt. Cook until bubbly, about 2 minutes.
  3. Remove from heat and quickly whisk in the egg yolk. Stir in the chopped pecans and let cool slightly.

Step 3: Assemble the Brownie Bombs

  1. Scoop 1 tablespoon of pecan pie filling and roll it into a ball.
  2. Take about 2 tablespoons of brownie crumbs, flatten it in your hand, and wrap it around the pecan filling. Roll into a smooth ball and place on a lined baking sheet.
  3. Repeat with remaining filling and brownies. Freeze for 20-30 minutes to firm up.

Step 4: Coat in Chocolate

  1. Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Dip each brownie bomb into the melted chocolate, coating completely. Let excess drip off, then place back on parchment paper.
  3. Sprinkle with extra chopped pecans or sea salt for garnish (optional).

Step 5: Let Set & Enjoy!

  1. Let the chocolate coating set at room temperature or refrigerate for 15 minutes before serving.

  • Use Homemade Brownies – Fudgy brownies work best; avoid cakey ones.
