Ingredients
For the Feta Rolls:
1 block (8 oz) feta cheese
½ cup cream cheese, softened
1 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
½ tsp garlic powder
½ tsp black pepper
1 tsp lemon zest
12 sheets phyllo pastry (thawed if frozen)
¼ cup olive oil (for brushing)
For the Chili Honey Drizzle:
⅓ cup honey
1 tsp chili flakes (adjust to taste)
1 tsp apple cider vinegar
Pinch of salt
Instructions
Step 1: Make the Filling
In a mixing bowl, combine crumbled feta, cream cheese, parsley, dill, garlic powder, black pepper, and lemon zest.
Use a fork or spatula to mix until creamy and well combined. The mixture should be thick and spreadable.
Step 2: Prep the Phyllo Pastry
Preheat your oven to 400°F (200°C).
Place a sheet of parchment paper on your baking sheet.
Lay out one sheet of phyllo pastry on a clean surface and lightly brush with olive oil.
Place another sheet on top and brush again—repeat until you have 3 layers.
Keep the remaining phyllo sheets covered with a damp towel to prevent drying out.
Step 3: Assemble the Rolls
Spoon 2 tablespoons of the feta mixture along the short edge of the layered phyllo sheet.
Fold in the sides and roll tightly like a spring roll.
Place the roll seam-side down on the prepared baking sheet.
Repeat with the remaining filling and phyllo sheets, making 8–10 rolls total.
Brush the tops of all the rolls with olive oil for extra crispiness.
Step 4: Bake Until Golden
Bake in the preheated oven for 18–20 minutes, or until the rolls are golden brown and crispy on the outside.
Rotate the pan halfway through baking for even browning.
Step 5: Make the Chili Honey
While the rolls are baking, combine honey, chili flakes, apple cider vinegar, and a pinch of salt in a small saucepan.
Heat over low for 2–3 minutes, just until warm and slightly infused.
Remove from heat and let it rest—this gives time for the flavors to blend beautifully.
Step 6: Serve & Drizzle
Once the feta rolls are out of the oven, let them cool slightly for 3–5 minutes.
Arrange on a platter and drizzle generously with the warm chili honey.
Serve immediately while they’re still crisp and gooey in the center.
