  • 1 can (14.5 oz) diced tomatoes
  • ½ cup vegetable or chicken broth
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 1 can (15 oz) butter beans, drained and rinsed
  • ¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh basil (for garnish)
  • Crusty bread or cooked rice, for serving

Instructions

Step 1: Sauté the Aromatics

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic, red pepper flakes, smoked paprika, oregano, and basil. Stir for another minute until fragrant.

Step 2: Simmer the Sauce

Pour in the diced tomatoes and broth. Stir well, then let it simmer for about 10 minutes, allowing the flavors to meld together.

Step 3: Add the Cream & Beans

Reduce the heat to low and stir in the heavy cream. Add the drained butter beans and Parmesan cheese, stirring until the sauce becomes creamy and coats the beans beautifully. Let it cook for another 5 minutes, stirring occasionally.

Step 4: Season & Serve

Taste and adjust salt and pepper as needed. Garnish with fresh basil and serve warm with crusty bread or over cooked rice.
