For the Crust:
- 2 cups graham cracker crumbs (or digestive biscuits)
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
For the Mango Cheesecake Filling:
- 1 ½ cups cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh mango puree (blend ripe mangoes until smooth)
- 1 cup heavy cream, whipped
- 1 tablespoon gelatin powder
- 3 tablespoons warm water
For the Mango Topping:
- 1 cup mango puree
- 1 tablespoon sugar (optional, depending on mango sweetness)
- 1 teaspoon gelatin powder
- 2 tablespoons warm water
Instructions
Step 1: Prepare the Crust
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom of a springform pan.
- Chill in the refrigerator for 15-20 minutes while you prepare the filling.
Step 2: Make the Mango Cheesecake Filling
- Dissolve gelatin powder in warm water, stirring until fully dissolved. Set aside.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Add mango puree and mix until well combined.
- Gently fold in the whipped heavy cream, mixing until fluffy and smooth.
- Finally, stir in the dissolved gelatin and mix well.
Step 3: Assemble & Chill
- Pour the cheesecake filling over the prepared crust and spread evenly.
- Refrigerate for at least 4-6 hours, or until set.
Step 4: Prepare the Mango Topping
- Dissolve gelatin powder in warm water and let it cool slightly.
- Mix with mango puree and sugar (if using).
- Pour the topping over the chilled cheesecake and spread evenly.
- Refrigerate for another 1-2 hours, until the topping is set.
Step 5: Serve & Enjoy
- Once fully set, carefully remove the cheesecake from the springform pan.
- Garnish with fresh mango slices, whipped cream, or mint leaves.
- Slice and serve chilled!
