For the Crust:

  • 1 cup graham cracker crumbs

  • 3 tbsp melted butter

  • 1 tbsp sugar

For the Cheesecake Filling:

  • 16 oz cream cheese (softened)

  • ½ cup sugar

  • 2 large eggs

  • ½ cup sour cream

  • 1 tsp vanilla extract

  • ¼ cup rainbow sprinkles (jimmies, not nonpareils)

Optional Toppings:

  • Whipped cream

  • Extra sprinkles

  • White chocolate drizzle or frosting (for extra flair)


Instructions

Step 1: Prep the Crust
Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
In a bowl, mix graham cracker crumbs, melted butter, and sugar.
Spoon about 1 tablespoon of mixture into each liner and press firmly.
Bake for 5 minutes, then remove and let cool slightly.

Step 2: Make the Cheesecake Batter
Beat the cream cheese and sugar until smooth.
Add eggs, one at a time, mixing just until incorporated.
Add sour cream and vanilla, then fold in the sprinkles gently.

Step 3: Fill & Bake
Divide the filling evenly over the crusts.
Bake for 18–20 minutes or until centers are just set (slightly jiggly).
Cool completely, then chill in the fridge for at least 2 hours.

 

Step 4: Decorate & Serve
Top with whipped cream, more sprinkles, or drizzle with white chocolate.
Remove liners and serve cold—birthday candle optional, but recommended.

Notes

Use jimmies-style sprinkles – they won’t bleed like nonpareils.
Chill thoroughly for the best texture and easy removal from liners.
Want even layers? Use a cookie scoop for both crust and filling.
Customize for holidays with themed sprinkles or flavored extract.
