1 small yellow onion, diced

½ tsp crushed red pepper flakes (optional for heat)

½ cup sun-dried tomatoes (in oil), chopped

4 cups chicken broth

1 cup heavy cream or half-and-half

2 cups shredded cooked chicken (rotisserie works great)

1 tsp Italian seasoning

½ tsp salt + black pepper to taste

1 cup grated Parmesan cheese

2 cups fresh baby spinach

Optional: ½ cup cooked pasta, rice, or gnocchi for extra heartiness
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 3–4 minutes. Stir in garlic, red pepper flakes, and chopped sun-dried tomatoes. Sauté for another 1–2 minutes until fragrant.
Pour in chicken broth and bring to a simmer. Add Italian seasoning, salt, and pepper. Stir in the heavy cream and bring to a low simmer—don’t boil.
Stir in the shredded chicken and let it warm through for 5 minutes. Add the spinach and simmer until wilted, about 2–3 minutes.
Lower the heat and stir in the grated Parmesan. Let it melt into the broth, stirring constantly. Taste and adjust seasoning if needed.
Ladle into bowls and serve with crusty bread, garlic toast, or a sprinkle of extra Parmesan on top.
