Ingredients

Scale

For the Mini Burger Patties:

  • 1 lb ground beef

  • 1 egg

  • ¼ cup breadcrumbs

  • 1 tbsp soy sauce

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

For the Assembly:

  • 1 cup fresh pineapple, cut into 1-inch chunks or rings

  • 6 slices cheddar or provolone cheese, quartered

  • 12 tbsp olive oil or butter (for cooking)

  • Teriyaki glaze or sauce (store-bought or homemade)

  • Toothpicks or cocktail skewers

Optional Toppings & Add-ons:

  • Sliced jalapeños

  • Red onion, thinly sliced

  • Mini buns or slider rolls

  • Lettuce leaves or shredded cabbage

  • Pickles or cucumber ribbons

Instructions

Step 1: Make the Mini Burger Patties
In a large bowl, combine ground beef, egg, breadcrumbs, soy sauce, garlic powder, onion powder, salt, and pepper.
Mix until just combined—don’t overwork the meat.
Form into small meatballs, then flatten slightly into 1.5-inch mini patties (about 18–20 pieces).
Set aside while you prep the other ingredients.

Step 2: Cook the Patties
Heat a skillet or grill pan over medium heat with a bit of olive oil or butter.
Cook the mini patties for about 3–4 minutes per side, or until fully cooked and browned.
Place a small square of cheese on each patty during the last minute of cooking and cover to melt.

Step 3: Sear or Grill the Pineapple
Wipe the pan clean or use a separate skillet.
Add pineapple chunks or rings and cook for 1–2 minutes per side until caramelized and lightly browned.
This step brings out the natural sweetness and adds a smoky flavor.

Step 4: Assemble the Burger Bites
On each toothpick or skewer, layer one piece of pineapple, one cheesy mini burger patty, and any optional toppings like red onion or jalapeño slices.
Arrange on a platter.

Step 5: Drizzle with Teriyaki Glaze
Drizzle each assembled bite with warm teriyaki glaze.
Serve immediately and enjoy warm!

Notes

Use 80/20 Ground Beef – Keeps patties juicy and flavorful.
Caramelize Pineapple – Adds depth and sweetness.
Don’t Overmix – Light mixing gives tender burger patties.
Make Ahead – Shape patties and prep ingredients ahead, then cook and assemble before serving.
Make Them Sliders – Add all components to small slider buns for mini Hawaiian burgers.
