For the Turkey Filling:
- 1 lb ground turkey
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Dijon mustard
- ½ teaspoon dried thyme (or fresh thyme)
- ½ cup mushrooms, finely chopped (optional)
- ½ cup spinach, chopped (optional)
- ¼ cup breadcrumbs (or almond flour for keto)
- 1 egg, beaten (for the filling)
For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 teaspoon water (to thin egg wash)
For Serving (Optional):
- Dijon mustard or horseradish sauce
- Side of roasted vegetables or mashed potatoes
Instructions
Step 1: Prepare the Turkey Filling
- Heat olive oil in a skillet over medium heat.
- Add ground turkey, salt, pepper, garlic powder, onion powder, and thyme. Cook for 5-7 minutes until browned.
- Stir in mushrooms and spinach, cooking for another 2 minutes until softened.
- Remove from heat and stir in Dijon mustard and breadcrumbs. Let cool slightly.
- Mix in 1 beaten egg to help bind the filling. Set aside to cool completely.
Step 2: Assemble the Wellington
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface.
- Spoon the turkey filling into the center of the pastry, shaping it into a log.
- Fold the pastry over the filling, sealing the edges with a little water.
- Place seam-side down on the baking sheet.
- Brush the top with egg wash (beaten egg + water) for a golden finish.
Step 3: Bake the Wellington
- Bake for 25-30 minutes until golden brown and puffed.
- Let rest for 5 minutes before slicing.
Step 4: Serve & Enjoy!
- Slice and serve warm with Dijon mustard, horseradish sauce, or a side of roasted vegetables.
