Ingredients

2 tbsp unsalted butter

For Finishing:

1 tbsp crème fraîche (for a rich, cool finish)

1 tbsp chopped fresh chives or scallions (optional)

2 slices of toasted sourdough or brioche bread (for serving)
Instructions
Step 1: Crack and Prep the Eggs
Crack the eggs directly into a cold, nonstick saucepan (no preheating).
Add the butter into the same pan with the eggs. Do not season at this point.
Step 2: Start Cooking with Controlled Heat
Place the pan over medium-high heat.
With a silicone spatula, stir continuously in a circular motion, making sure to scrape the bottom and sides of the pan.
Keep stirring for 30 seconds, then remove the pan from the heat for about 10 seconds while continuing to stir.
Return the pan to the heat and repeat this process of moving it on and off the heat.
Step 3: Stir Until Just Set
The eggs will start to form small curds. Continue the on-and-off heat method while stirring until the mixture thickens to a soft, scrambled consistency.
It should be creamy and slightly loose—don’t overcook it.
Step 4: Add Crème Fraîche & Season
Remove from heat completely and stir in the crème fraîche to stop the cooking.
Now, season with salt and freshly ground black pepper to taste.
Step 5: Serve Immediately
Spoon the scrambled eggs onto hot buttered toast.
Top with chopped chives or scallions for a fresh bite if desired.
