For the Meatloaf:

  • 1 ½ lbs ground chicken
  • ¾ cup breadcrumbs (Panko or regular)
  • ½ cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg, lightly beaten
  • ¼ cup milk (for moisture)
  • 2 tablespoons fresh parsley, chopped (or 1 teaspoon dried)

For the Topping:

  • ¼ cup Parmesan cheese, grated
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano

Instructions

Step 1: Prepare the Oven & Pan

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×5-inch loaf pan or line a baking sheet with parchment paper if shaping by hand.

Step 2: Mix the Meatloaf Ingredients

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, and black pepper.
  2. Add the beaten egg and milk, then mix until just combined. Do not overmix, as this can make the meatloaf dense.

Step 3: Shape & Bake

  1. Transfer the mixture into the loaf pan or shape it into a loaf on the baking sheet.
  2. Bake for 30 minutes.

Step 4: Add the Topping

  1. While the meatloaf is baking, mix Parmesan cheese, melted butter, garlic powder, and oregano in a small bowl.
  2. After 30 minutes of baking, remove the meatloaf from the oven and spread the topping evenly over it.
  3. Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C).

Step 5: Rest & Serve

  1. Let the meatloaf rest for 5-10 minutes before slicing. This helps keep it juicy.
  2. Garnish with extra parsley and serve warm.

  • Don’t Overmix – Gently combine the ingredients to keep the meatloaf light and tender.
  • Use Fresh Parmesan – For the best cheesy flavor, avoid pre-grated Parmesan.
