For the Meatloaf:
- 1 ½ lbs ground chicken
- ¾ cup breadcrumbs (Panko or regular)
- ½ cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 egg, lightly beaten
- ¼ cup milk (for moisture)
- 2 tablespoons fresh parsley, chopped (or 1 teaspoon dried)
For the Topping:
- ¼ cup Parmesan cheese, grated
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
Instructions
Step 1: Prepare the Oven & Pan
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×5-inch loaf pan or line a baking sheet with parchment paper if shaping by hand.
Step 2: Mix the Meatloaf Ingredients
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, and black pepper.
- Add the beaten egg and milk, then mix until just combined. Do not overmix, as this can make the meatloaf dense.
Step 3: Shape & Bake
- Transfer the mixture into the loaf pan or shape it into a loaf on the baking sheet.
- Bake for 30 minutes.
Step 4: Add the Topping
- While the meatloaf is baking, mix Parmesan cheese, melted butter, garlic powder, and oregano in a small bowl.
- After 30 minutes of baking, remove the meatloaf from the oven and spread the topping evenly over it.
- Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
Step 5: Rest & Serve
- Let the meatloaf rest for 5-10 minutes before slicing. This helps keep it juicy.
- Garnish with extra parsley and serve warm.
