Ingredients

For the Filling:

  • 1 cup cooked spinach, chopped and squeezed dry
  • ¾ cup canned or jarred artichoke hearts, finely chopped
  • 8 oz cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)

For the Coating:

  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Oil for frying (vegetable or canola)

For Dipping (Optional):

  • Ranch dressing
  • Marinara sauce
  • Spicy aioli

Instructions

Step 1: Make the Filling

  1. In a mixing bowl, combine cooked spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic, salt, black pepper, and red pepper flakes.
  2. Mix until smooth and well combined.
  3. Scoop out 1-inch portions and roll into balls. Place them on a parchment-lined baking sheet.
  4. Freeze for 30 minutes to firm up.

Step 2: Prepare the Breading Station

  1. Place flour in one bowl.
  2. Beat eggs in a second bowl.
  3. In a third bowl, mix panko breadcrumbs, garlic powder, paprika, salt, and black pepper.

Step 3: Coat the Balls

  1. Roll each ball in flour, then dip into egg, and coat with panko mixture.
  2. Repeat for all balls and place back on the baking sheet.

Step 4: Fry Until Golden

  1. Heat oil in a deep skillet or fryer to 350°F (175°C).
  2. Fry the balls in batches for 2-3 minutes, until golden brown.
  3. Remove and drain on paper towels.

Step 5: Serve & Enjoy!

  1. Serve hot with ranch, marinara, or spicy aioli.
  2. Garnish with extra Parmesan and chopped parsley if desired.

Notes

  • Freeze Before Frying – Helps them hold their shape.
  • Use Panko for Extra Crunch – Creates a crispier texture.
