For the Filling:
- 1 cup cooked spinach, chopped and squeezed dry
- ¾ cup canned or jarred artichoke hearts, finely chopped
- 8 oz cream cheese, softened
- ½ cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 clove garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
For the Coating:
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- Oil for frying (vegetable or canola)
For Dipping (Optional):
- Ranch dressing
- Marinara sauce
- Spicy aioli
Instructions
Step 1: Make the Filling
- In a mixing bowl, combine cooked spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic, salt, black pepper, and red pepper flakes.
- Mix until smooth and well combined.
- Scoop out 1-inch portions and roll into balls. Place them on a parchment-lined baking sheet.
- Freeze for 30 minutes to firm up.
Step 2: Prepare the Breading Station
- Place flour in one bowl.
- Beat eggs in a second bowl.
- In a third bowl, mix panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
Step 3: Coat the Balls
- Roll each ball in flour, then dip into egg, and coat with panko mixture.
- Repeat for all balls and place back on the baking sheet.
Step 4: Fry Until Golden
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry the balls in batches for 2-3 minutes, until golden brown.
- Remove and drain on paper towels.
Step 5: Serve & Enjoy!
- Serve hot with ranch, marinara, or spicy aioli.
- Garnish with extra Parmesan and chopped parsley if desired.
