- ½ cup cottage cheese (full-fat for best texture)
- 1 teaspoon baking powder
- ¼ teaspoon salt

- ½ teaspoon honey or sugar (optional, for a hint of sweetness)

Instructions
Step 1: Preheat & Prepare
- Preheat oven to 325°F (160°C).
- Line a baking sheet with parchment paper.
Step 2: Whip the Egg Whites
- In a clean bowl, beat egg whites and cream of tartar with a hand mixer until stiff peaks form (about 3-4 minutes).
Step 3: Blend the Cottage Cheese Mixture
- In another bowl, blend cottage cheese, egg yolks, baking powder, salt, and optional seasonings until smooth.
Step 4: Fold & Combine
- Gently fold the egg whites into the cottage cheese mixture using a spatula, being careful not to deflate the fluffiness.
Step 5: Shape & Bake
- Spoon the mixture onto the prepared baking sheet, forming small, round mounds.
- Sprinkle with seeds, Parmesan, or herbs if desired.
- Bake for 25-30 minutes, or until golden brown and set.
Step 6: Cool & Serve
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Serve warm or store for later use!
