  • ¼ teaspoon cream of tartar (helps with fluffiness)
  • ½ cup cottage cheese (full-fat for best texture)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder (optional, for a savory version)
  • ½ teaspoon honey or sugar (optional, for a hint of sweetness)

For Toppings (Optional):

  • Sesame or poppy seeds
  • Parmesan cheese
  • Fresh herbs (like chives or rosemary)

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 325°F (160°C).
  2. Line a baking sheet with parchment paper.

Step 2: Whip the Egg Whites

  1. In a clean bowl, beat egg whites and cream of tartar with a hand mixer until stiff peaks form (about 3-4 minutes).

Step 3: Blend the Cottage Cheese Mixture

  1. In another bowl, blend cottage cheese, egg yolks, baking powder, salt, and optional seasonings until smooth.

Step 4: Fold & Combine

  1. Gently fold the egg whites into the cottage cheese mixture using a spatula, being careful not to deflate the fluffiness.

Step 5: Shape & Bake

  1. Spoon the mixture onto the prepared baking sheet, forming small, round mounds.
  2. Sprinkle with seeds, Parmesan, or herbs if desired.
  3. Bake for 25-30 minutes, or until golden brown and set.

Step 6: Cool & Serve

  1. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  2. Serve warm or store for later use!

Notes

  • Use Full-Fat Cottage Cheese – Makes the bread richer and fluffier.
  • Don’t Overmix – Fold gently to keep the batter light.
