Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 eggs, lightly beaten
  • 1 tablespoon vegetable oil
  • ½ cup chopped green onions
  • ½ cup mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • Optional: ½ teaspoon chili flakes for spice

Instructions

  • Prepare the Rice:

    • If using fresh rice, spread it out to cool slightly before frying. Day-old rice works best for a firmer texture.
  • Cook the Eggs:

    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
    • Pour in the beaten eggs, scramble them, and then set aside.
  • Sauté the Vegetables:

    • In the same pan, add a little more oil if needed.
    • Sauté the garlic and mixed vegetables for 2 minutes until softened.
  • Stir-Fry the Rice:

    • Add the cooked rice to the pan and stir well.
    • Pour in soy sauce, sesame oil, and black pepper. Stir-fry for 2-3 minutes.

 

  • Combine & Serve:

    • Add the scrambled eggs back into the pan along with green onions.
    • Stir well, cook for another minute, then serve hot!

Notes

  • Protein Boost: Add chicken, shrimp, or tofu.
  • Extra Flavor: Toss in a teaspoon of oyster sauce or a splash of lime juice.
