Ingredients
Scale
- 1 ½ lbs baby potatoes, halved – Creamy and perfect for crisping.
- ¼ cup unsalted butter, melted – Adds rich flavor and helps the cheese stick.
- ½ cup grated Parmesan cheese – The key to a crispy, golden crust.
- 1 teaspoon garlic powder – For a delicious savory kick.
- ½ teaspoon paprika – Adds a hint of smokiness.
- ½ teaspoon salt – Enhances the flavor.
- ¼ teaspoon black pepper – A little heat for balance.
- 1 teaspoon dried Italian seasoning – A flavorful blend of herbs.
- 1 tablespoon olive oil – Helps the potatoes roast evenly.
- Fresh parsley, chopped (for garnish) – Adds a fresh pop of color.
Instructions
Step 1: Prep the Oven & Baking Sheet
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking sheet or line it with parchment paper.
Step 2: Prepare the Parmesan Crust
- In a bowl, mix Parmesan, garlic powder, paprika, salt, pepper, and Italian seasoning.
- Pour melted butter onto the baking sheet and spread it evenly.
- Sprinkle the Parmesan mixture over the butter in an even layer.
Step 3: Coat the Potatoes
- Toss the halved potatoes with olive oil to coat.
- Place them cut-side down onto the Parmesan layer, pressing them slightly so they stick.
Step 4: Bake Until Crispy
- Bake for 35-40 minutes, or until golden brown and crispy.
- Remove from the oven and let them rest for 5 minutes before gently loosening them from the baking sheet.
Step 5: Garnish & Serve
- Sprinkle with fresh parsley for color and freshness.
- Serve immediately with your favorite dipping sauce (garlic aioli, ranch, or sour cream!).
Notes
- Use Baby Potatoes: They get crispier and cook evenly.
- Press the Potatoes Down: Ensures they absorb the Parmesan crust.
- Don’t Overcrowd: Give space between potatoes for better crisping.
- Let Them Rest: Helps them crisp up before removing from the pan.
