Ingredients

- 1 lb turkey sausage (mild or spicy), casings removed
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach (or kale)
- 1 cup small pasta (orzo, ditalini, or elbow)
For Garnish:
- Extra Parmesan cheese
- Crushed red pepper flakes (optional, for spice)
- Chopped fresh parsley
Instructions
Step 1: Brown the Turkey Sausage
- Heat olive oil in a large pot over medium heat.
- Add turkey sausage and cook for 5-6 minutes, breaking it into crumbles until browned.
Step 2: Sauté the Vegetables
- Stir in onion, garlic, and carrots, cooking for 3-4 minutes until softened.
- Add Italian seasoning, salt, and black pepper, stirring to coat the veggies.
Step 3: Simmer the Broth
- Pour in chicken broth and bring to a gentle boil.
- Add pasta and cook for 8-10 minutes, until tender.
Step 4: Make It Creamy
- Lower heat to medium-low and stir in heavy cream and Parmesan cheese.
- Add spinach and simmer for 2 more minutes until wilted.
Step 5: Serve & Enjoy!
- Ladle into bowls and top with extra Parmesan, red pepper flakes, and parsley.
