  • 1 lb turkey sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 teaspoon dried Italian seasoning

  • ½ teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach (or kale)
  • 1 cup small pasta (orzo, ditalini, or elbow)

For Garnish:

  • Extra Parmesan cheese
  • Crushed red pepper flakes (optional, for spice)
  • Chopped fresh parsley

Instructions

Step 1: Brown the Turkey Sausage

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey sausage and cook for 5-6 minutes, breaking it into crumbles until browned.

Step 2: Sauté the Vegetables

  1. Stir in onion, garlic, and carrots, cooking for 3-4 minutes until softened.
  2. Add Italian seasoning, salt, and black pepper, stirring to coat the veggies.

Step 3: Simmer the Broth

  1. Pour in chicken broth and bring to a gentle boil.
  2. Add pasta and cook for 8-10 minutes, until tender.

Step 4: Make It Creamy

  1. Lower heat to medium-low and stir in heavy cream and Parmesan cheese.
  2. Add spinach and simmer for 2 more minutes until wilted.

Step 5: Serve & Enjoy!

  1. Ladle into bowls and top with extra Parmesan, red pepper flakes, and parsley.
