For the Chicken Meatballs:
- 1 lb ground chicken
- ½ cup breadcrumbs (or panko)
- 1 egg
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons grated Parmesan cheese (optional)
- 1 tablespoon olive oil (for frying)
For the Creamy Mushroom Sauce:
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (cremini or white)
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon flour (for thickening)
- 1 cup chicken broth
- ½ cup heavy cream (or half-and-half for a lighter option)
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh parsley (for garnish)
Instructions
Step 1: Prepare the Meatballs
- In a bowl, mix ground chicken, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, paprika, and Parmesan cheese until well combined.
- Roll into 1-inch meatballs (about 12-15 meatballs).
Step 2: Cook the Meatballs
- Heat olive oil in a large skillet over medium heat.
- Add meatballs and cook for 4-5 minutes per side, until golden brown. Remove and set aside.
Step 3: Make the Mushroom Sauce
- In the same skillet, melt butter and sauté onions until softened (about 3 minutes).
- Add garlic and mushrooms, cooking until mushrooms are tender (5 minutes).
- Stir in Italian seasoning, salt, black pepper, and flour. Cook for 1 minute, stirring constantly.
- Gradually add chicken broth, whisking to remove lumps. Simmer for 2 minutes.
- Stir in heavy cream and Parmesan cheese, cooking until thickened.
Step 4: Combine & Serve
- Return the meatballs to the skillet, spooning sauce over them.
- Simmer for 5 minutes, until meatballs are fully cooked.
- Garnish with fresh parsley and serve hot!

- Don’t Overmix the Meatballs – Keeps them tender and juicy.
- Use Fresh Mushrooms – They add the best flavor to the sauce.
- For Extra Creaminess – Add 2 tablespoons of cream cheese to the sauce.
