For the Chicken Meatballs:

  • 1 lb ground chicken
  • ½ cup breadcrumbs (or panko)
  • 1 egg
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon olive oil (for frying)

For the Creamy Mushroom Sauce:

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (cremini or white)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon flour (for thickening)
  • 1 cup chicken broth
  • ½ cup heavy cream (or half-and-half for a lighter option)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley (for garnish)

Instructions

Step 1: Prepare the Meatballs

  1. In a bowl, mix ground chicken, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, paprika, and Parmesan cheese until well combined.
  2. Roll into 1-inch meatballs (about 12-15 meatballs).

Step 2: Cook the Meatballs

  1. Heat olive oil in a large skillet over medium heat.
  2. Add meatballs and cook for 4-5 minutes per side, until golden brown. Remove and set aside.

Step 3: Make the Mushroom Sauce

  1. In the same skillet, melt butter and sauté onions until softened (about 3 minutes).
  2. Add garlic and mushrooms, cooking until mushrooms are tender (5 minutes).
  3. Stir in Italian seasoning, salt, black pepper, and flour. Cook for 1 minute, stirring constantly.
  4. Gradually add chicken broth, whisking to remove lumps. Simmer for 2 minutes.
  5. Stir in heavy cream and Parmesan cheese, cooking until thickened.

Step 4: Combine & Serve

  1. Return the meatballs to the skillet, spooning sauce over them.
  2. Simmer for 5 minutes, until meatballs are fully cooked.
  3. Garnish with fresh parsley and serve hot!

Notes

  • Don’t Overmix the Meatballs – Keeps them tender and juicy.
  • Use Fresh Mushrooms – They add the best flavor to the sauce.
  • For Extra Creaminess – Add 2 tablespoons of cream cheese to the sauce.
  • For a Lighter Version – Use half-and-half instead of heavy cream.
