- 4 beef sausages, sliced – Adds a savory, smoky depth of flavor.
- 3 tablespoons unsalted butter – The base of the rich sauce.
- 4 cloves garlic, minced – Adds a delicious garlicky kick.
- 2 cups heavy cream – For a luxuriously smooth and creamy sauce.
- 1 cup grated Parmesan cheese – Melts into the sauce for a rich, cheesy taste.
- ½ teaspoon salt – Enhances all the flavors.
- ½ teaspoon black pepper – Adds a subtle spice.
- ½ teaspoon Italian seasoning – A blend of basil, oregano, and thyme for extra flavor.
- ¼ teaspoon red pepper flakes (optional) – For a hint of heat.
- ½ cup pasta water (reserved) – Helps create the perfect sauce consistency.
- Fresh parsley, chopped (for garnish) – Adds a fresh and vibrant touch.
Instructions
Step 1: Cook the Fettuccine
- Bring a large pot of salted water to a boil.
- Add fettuccine and cook according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain the pasta and set aside.
Step 2: Cook the Beef Sausages
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the sliced beef sausages and cook for 4-5 minutes, stirring occasionally, until browned.
- Remove the sausages from the skillet and set aside.
Step 3: Make the Creamy Garlic Parmesan Sauce
- In the same skillet, melt 3 tablespoons butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream, then stir in Parmesan cheese, salt, black pepper, Italian seasoning, and red pepper flakes (if using).
- Simmer for 2-3 minutes, stirring constantly, until the sauce thickens slightly.
Step 4: Combine Everything
- Reduce the heat to low and add the drained fettuccine to the sauce.
- Toss well, adding reserved pasta water a little at a time until the sauce coats the pasta perfectly.
- Return the beef sausages to the skillet and mix until heated through.
Step 5: Serve & Enjoy
- Garnish with fresh parsley and extra Parmesan cheese.
- Serve hot and enjoy this creamy, flavorful dish!
Notes
- Use Freshly Grated Parmesan: It melts better and gives the sauce a smoother consistency.
- Don’t Overcook the Pasta: Keep it al dente so it doesn’t become mushy in the sauce.
- Adjust the Thickness: Add more pasta water for a thinner sauce or more Parmesan for a thicker one.
- Make it Spicy: Add extra red pepper flakes for a kick of heat.
