Ingredients

Scale

1 cup full-fat cottage cheese
4 large eggs
1 ½ cups almond flour (blanched and finely ground)
1 tbsp baking powder
¼ tsp salt
½ tsp garlic powder (optional, for a savory twist)
1 tbsp olive oil or melted butter (for added moisture)

Optional Add-ins:
¼ cup shredded cheddar or mozzarella (for cheesy flavor)
1 tbsp chopped chives or rosemary (for herbal notes)
1 tbsp sesame seeds or sunflower seeds (for topping)

Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C)
Line a loaf pan with parchment paper or lightly grease it to prevent sticking

Step 2: Blend the Wet Ingredients
In a large mixing bowl, add the cottage cheese and eggs
Use a hand mixer or whisk to blend until mostly smooth (some small curds are fine)
Mix in the olive oil or melted butter for added richness

Step 3: Add Dry Ingredients
Add almond flour, baking powder, salt, and garlic powder (if using)
Stir until the batter is thick and well combined
If desired, fold in cheese or herbs for extra flavor

Step 4: Pour and Smooth
Pour the batter into the prepared loaf pan and smooth the top with a spatula
Sprinkle with seeds or herbs for a decorative and tasty topping

Step 5: Bake the Bread
Bake for 35–45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely

Step 6: Slice and Serve
Once fully cooled, slice with a sharp knife and enjoy as-is or toasted

Notes

Room Temp Ingredients – Helps the batter mix more smoothly
Don’t Overbake – Almond flour browns quickly; check early to avoid dryness
Cool Before Slicing – This keeps the bread from crumbling
Use Full-Fat Cottage Cheese – Adds richness and moisture to the loaf
Customize It – Try adding dried herbs, shredded veggies, or even chopped olives
