  • ¾ cup cottage cheese
  • ½ cup crushed pineapple, drained
  • ½ cup shredded coconut (plus extra for topping)
  • ½ cup honey or maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ¼ cup milk (dairy or non-dairy)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease with coconut oil.

Step 2: Mix the Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

Step 3: Combine the Wet Ingredients

  • In another bowl, mix cottage cheese, pineapple, shredded coconut, honey (or maple syrup), melted coconut oil, vanilla, egg, and milk until well combined.

Step 4: Make the Batter

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Don’t overmix!

Step 5: Fill the Muffin Cups

  • Divide the batter evenly into the muffin tin, filling each about ¾ full.
  • Sprinkle extra shredded coconut on top for a golden, toasty finish.

Step 6: Bake the Muffins

  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool and Enjoy

  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  • Enjoy warm or at room temperature!
