  • 2 cloves garlic, minced (plus 1 whole clove for rubbing)
  • 4 medium ripe tomatoes, diced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon balsamic vinegar (optional, for depth)
  • 56 fresh basil leaves, chopped
  • ¼ teaspoon red pepper flakes (optional, for spice)

Instructions

Step 1: Prepare the Tomato Topping

  1. In a bowl, mix diced tomatoes, minced garlic, salt, black pepper, balsamic vinegar (if using), and basil.
  2. Drizzle with 1 tablespoon olive oil and stir well. Let sit for 5-10 minutes to enhance flavors.

Step 2: Toast the Bread

  1. Preheat oven to 400°F (200°C) or heat a grill pan over medium heat.
  2. Brush bread slices with remaining olive oil on both sides.
  3. Toast in the oven for 8-10 minutes or grill for 2-3 minutes per side, until golden and crispy.

Step 3: Assemble & Serve

  1. While warm, rub each toast slice with a whole garlic clove for extra flavor.
  2. Spoon the tomato mixture over the toasted bread.
  3. Sprinkle with red pepper flakes and an extra drizzle of olive oil.
