- 1 French baguette or Italian ciabatta, sliced
- 3 tablespoons extra virgin olive oil
- 2 cloves garlic, minced (plus 1 whole clove for rubbing)
- 4 medium ripe tomatoes, diced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon balsamic vinegar (optional, for depth)
- 5–6 fresh basil leaves, chopped
- ¼ teaspoon red pepper flakes (optional, for spice)
Instructions
Step 1: Prepare the Tomato Topping
- In a bowl, mix diced tomatoes, minced garlic, salt, black pepper, balsamic vinegar (if using), and basil.
- Drizzle with 1 tablespoon olive oil and stir well. Let sit for 5-10 minutes to enhance flavors.
Step 2: Toast the Bread
- Preheat oven to 400°F (200°C) or heat a grill pan over medium heat.
- Brush bread slices with remaining olive oil on both sides.
- Toast in the oven for 8-10 minutes or grill for 2-3 minutes per side, until golden and crispy.
Step 3: Assemble & Serve
- While warm, rub each toast slice with a whole garlic clove for extra flavor.
- Spoon the tomato mixture over the toasted bread.
- Sprinkle with red pepper flakes and an extra drizzle of olive oil.
