For the Crust:

  • 1 ½ cups graham cracker crumbs (or crushed cinnamon graham crackers)
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon
  • 6 tablespoons unsalted butter, melted

For the Cinnamon Swirl:

  • ½ cup brown sugar
  • 1 ½ teaspoons cinnamon
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 tablespoon flour (for stability)

For the Cream Cheese Drizzle:

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (adjust for consistency)

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter until combined.
  3. Press mixture firmly into the bottom of the pan.
  4. Bake for 8-10 minutes, then set aside to cool.

Step 2: Make the Cinnamon Swirl

  1. In a small bowl, mix brown sugar, cinnamon, melted butter, and vanilla extract until smooth.

Step 3: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth.
  2. Add eggs, one at a time, mixing just until combined.
  3. Stir in vanilla extract, sour cream, and flour, mixing until smooth.

Step 4: Assemble the Cheesecake

  1. Pour half of the cheesecake batter over the cooled crust.
  2. Drizzle half of the cinnamon swirl mixture over the batter. Swirl gently with a knife.
  3. Pour the remaining cheesecake batter on top and repeat with the rest of the cinnamon swirl.

Step 5: Bake the Cheesecake

  1. Bake for 45-50 minutes, until the center is slightly jiggly but set.
  2. Turn off the oven and let the cheesecake cool inside for 1 hour.
  3. Transfer to the refrigerator and chill for at least 4 hours (or overnight).

Step 6: Make the Cream Cheese Drizzle

  1. In a small bowl, whisk together cream cheese, powdered sugar, vanilla extract, and milk until smooth.

Step 7: Serve & Enjoy!

  1. Drizzle the cream cheese icing over the chilled cheesecake before slicing.
