For the Cinnamon Roll Cups:

  • 1 can (8 oz) refrigerated cinnamon rolls (with icing)

  • ½ cup cream cheese, softened

  • ¼ cup granulated sugar

  • 1 large egg

  • ½ tsp vanilla extract

  • ½ tsp ground cinnamon

For the Topping:

  • 2 tablespoons butter, melted

  • ¼ cup brown sugar

  • 1 tsp ground cinnamon

  • 1 tablespoon chopped pecans or walnuts (optional)

For the Icing:

  • 2 tablespoons cream cheese, softened

  • ½ cup powdered sugar

  • 1 tablespoon milk

  • ½ tsp vanilla extract


Instructions

Step 1: Prepare the Cinnamon Roll Cups

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray or line it with paper liners.

  2. Open the can of cinnamon rolls and separate the rolls. Set aside the icing that comes with the rolls for later use.

  3. Flatten each cinnamon roll slightly and place one in each muffin cup, pressing it into the bottom and up the sides to form a crust. This will create a little cup shape.

Step 2: Make the Cheesecake Filling

  1. In a medium bowl, combine the softened cream cheese, granulated sugar, egg, vanilla extract, and cinnamon. Use an electric mixer to beat until smooth and creamy.

  2. Spoon about 1-2 tablespoons of the cheesecake mixture into each cinnamon roll cup, on top of the dough.

Step 3: Make the Topping

  1. In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon.

  2. Spoon the cinnamon sugar topping over the cheesecake mixture in each cup. Optionally, sprinkle with chopped pecans or walnuts for extra crunch.

Step 4: Bake the Cinnamon Roll Cheesecake Cups

  1. Place the muffin tin in the oven and bake for 18-20 minutes, or until the cinnamon roll dough is golden brown and the cheesecake filling is set.

  2. Keep an eye on the cups towards the end of baking to make sure the cinnamon rolls don’t burn.

Step 5: Make the Icing

  1. While the cups are baking, prepare the icing. In a small bowl, whisk together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.

  2. Once the cinnamon roll cheesecake cups are out of the oven, allow them to cool for about 5 minutes before drizzling with the icing.

Step 6: Serve & Enjoy

 

  1. Drizzle the cream cheese icing over the warm cinnamon roll cheesecake cups.

  2. Serve immediately and enjoy the delicious combination of cinnamon roll and cheesecake in each bite!

Notes

Don’t Overfill – Be sure not to overfill the muffin cups with the cheesecake mixture. You want to leave space for the cinnamon roll dough and the topping to bake.

Use Room Temperature Ingredients – To ensure a smooth cheesecake filling, make sure the cream cheese and egg are at room temperature.

Experiment with Toppings – You can add extra toppings like chocolate chips, fruit, or shredded coconut for added flavor and texture.

Serve Warm – These are best served warm when the cheesecake is creamy and the cinnamon roll crust is fresh out of the oven.
