For the Chicken:

  • 3 boneless, skinless chicken breasts (sliced lengthwise to make 6 thin cutlets)

  • ½ cup all-purpose flour

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Sauce:

  • 1 tbsp butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup fresh mushrooms, sliced (button or cremini work great)

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup chicken broth

  • ½ cup milk

  • ¼ tsp black pepper

  • ¼ tsp dried thyme

Topping:

  • 6 slices of mild cheese (like Muenster, mozzarella, or Swiss)

  • 2 tbsp fresh parsley, chopped (optional, for garnish)


Instructions

Step 1: Prep and Sear the Chicken

  1. Preheat oven to 350°F (175°C).

  2. In a shallow bowl, mix flour, salt, and black pepper.

  3. Dredge each chicken cutlet in the flour mixture, coating both sides.

  4. In a large skillet, heat olive oil and butter over medium-high heat.

  5. Sear chicken cutlets for 2-3 minutes per side until lightly golden (they don’t need to be fully cooked).

  6. Transfer seared chicken to a greased 9×13-inch baking dish.

Step 2: Make the Creamy Mushroom Sauce

  1. In the same skillet, melt 1 tbsp butter.

  2. Add onions and cook for 2-3 minutes until translucent.

  3. Add garlic and mushrooms and cook for another 5 minutes, until mushrooms are browned and tender.

  4. Stir in cream of mushroom soup, chicken broth, milk, pepper, and thyme.

  5. Simmer for 3-4 minutes, stirring until everything is well combined and slightly thickened.

Step 3: Assemble the Casserole

  1. Pour the mushroom sauce evenly over the chicken in the baking dish.

  2. Lay cheese slices on top of the chicken and sauce.

  3. Cover the dish with foil.

Step 4: Bake the Casserole

  1. Bake for 25 minutes covered.

  2. Remove the foil and bake an additional 10-15 minutes, until the cheese is bubbly and slightly golden.

  3. Let the casserole rest for 5 minutes before serving.

Step 5: Garnish and Serve

  1. Sprinkle with fresh parsley for color and freshness.

  2. Serve with rice, mashed potatoes, egg noodles, or crusty bread to soak up the sauce.

Notes

Thin Chicken is Key – Slice chicken breasts lengthwise for even cooking and perfect tenderness.
Don’t Overcook – Chicken finishes cooking in the oven, so just a quick sear is enough.
Cheese Options – Use your favorite mild melting cheese. Muenster, mozzarella, or Swiss all work wonderfully.
Make It Ahead – Assemble the casserole a day in advance, cover, refrigerate, and bake when needed.
