For the Meatloaf:
- 1 ½ lbs ground chicken
- ½ cup breadcrumbs (or almond flour for keto)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried parsley
- 1 teaspoon Dijon mustard
- 1 egg
- ¼ cup milk
For the Filling:
- 6 slices ham (thinly sliced)
- 6 slices Swiss cheese (or Gruyère)
For the Topping (Optional):
- ¼ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs (or crushed pork rinds for low-carb)
For the Creamy Dijon Sauce:
- 1 tablespoon butter
- 1 cup heavy cream (or half-and-half)
- 2 tablespoons Dijon mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ cup Parmesan cheese (optional, for extra creaminess)
Instructions
Step 1: Preheat & Prepare the Loaf Pan
- Preheat your oven to 375°F (190°C).
- Line a 9×5-inch loaf pan with parchment paper or lightly grease it.
Step 2: Make the Meatloaf Mixture
- In a large bowl, mix together ground chicken, breadcrumbs, garlic powder, onion powder, salt, black pepper, parsley, Dijon mustard, egg, and milk until well combined.
Step 3: Assemble the Meatloaf
- Press half of the chicken mixture into the loaf pan, forming an even layer.
- Layer ham slices over the chicken mixture, followed by Swiss cheese slices.
- Top with the remaining chicken mixture, smoothing it out to seal the filling inside.
Step 4: Add Topping & Bake
- Sprinkle the top with Parmesan cheese and breadcrumbs for a crispy crust.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
Step 5: Make the Creamy Dijon Sauce
- While the meatloaf bakes, melt butter in a small saucepan over medium heat.
- Add heavy cream, Dijon mustard, garlic powder, and black pepper. Whisk until smooth.
- Simmer for 3-4 minutes, then stir in Parmesan cheese until melted. Remove from heat.
Step 6: Serve & Enjoy!
- Let the meatloaf rest for 5-10 minutes before slicing.
- Drizzle with the Dijon sauce, garnish with fresh parsley, and serve warm.
Notes
- Use Ground Turkey Instead – Works just as well if you don’t have ground chicken.
- Let It Rest Before Slicing – This keeps the juices in and prevents it from falling apart.
- Make It Extra Cheesy – Add shredded Swiss cheese into the meat mixture for even more flavor.
- For a Crispier Crust – Broil the meatloaf for 2-3 minutes at the end of baking.
