For the Meatloaf:

  • 1 ½ lbs ground chicken
  • ½ cup breadcrumbs (or almond flour for keto)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 teaspoon Dijon mustard
  • 1 egg
  • ¼ cup milk

For the Filling:

  • 6 slices ham (thinly sliced)
  • 6 slices Swiss cheese (or Gruyère)

For the Topping (Optional):

  • ¼ cup grated Parmesan cheese
  • ¼ cup panko breadcrumbs (or crushed pork rinds for low-carb)

For the Creamy Dijon Sauce:

  • 1 tablespoon butter
  • 1 cup heavy cream (or half-and-half)
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese (optional, for extra creaminess)

Instructions

Step 1: Preheat & Prepare the Loaf Pan

  1. Preheat your oven to 375°F (190°C).
  2. Line a 9×5-inch loaf pan with parchment paper or lightly grease it.

Step 2: Make the Meatloaf Mixture

  1. In a large bowl, mix together ground chicken, breadcrumbs, garlic powder, onion powder, salt, black pepper, parsley, Dijon mustard, egg, and milk until well combined.

Step 3: Assemble the Meatloaf

  1. Press half of the chicken mixture into the loaf pan, forming an even layer.
  2. Layer ham slices over the chicken mixture, followed by Swiss cheese slices.
  3. Top with the remaining chicken mixture, smoothing it out to seal the filling inside.

Step 4: Add Topping & Bake

  1. Sprinkle the top with Parmesan cheese and breadcrumbs for a crispy crust.
  2. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).

Step 5: Make the Creamy Dijon Sauce

  1. While the meatloaf bakes, melt butter in a small saucepan over medium heat.
  2. Add heavy cream, Dijon mustard, garlic powder, and black pepper. Whisk until smooth.
  3. Simmer for 3-4 minutes, then stir in Parmesan cheese until melted. Remove from heat.

Step 6: Serve & Enjoy!

  1. Let the meatloaf rest for 5-10 minutes before slicing.
  2. Drizzle with the Dijon sauce, garnish with fresh parsley, and serve warm.

Notes

  • Use Ground Turkey Instead – Works just as well if you don’t have ground chicken.
  • Let It Rest Before Slicing – This keeps the juices in and prevents it from falling apart.
  • Make It Extra Cheesy – Add shredded Swiss cheese into the meat mixture for even more flavor.
  • For a Crispier Crust – Broil the meatloaf for 2-3 minutes at the end of baking.
