For the Salad:

  • 2 cups cooked pasta (rotini, penne, or bowtie)
  • 2 grilled chicken breasts, sliced
  • 3 cups chopped romaine lettuce
  • ½ cup cherry tomatoes, halved (optional)
  • ½ cup grated Parmesan cheese
  • ½ cup croutons
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

For the Caesar Dressing:

  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove, minced
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

Step 1: Cook the Pasta

  1. Bring a pot of salted water to a boil.
  2. Cook pasta according to package instructions until al dente.
  3. Drain, rinse with cold water, and set aside.

Step 2: Cook the Chicken

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes per side, until golden brown and cooked through.
  3. Let rest for 5 minutes, then slice into strips.

Step 3: Make the Caesar Dressing

  1. In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, garlic, black pepper, and olive oil until smooth.

Step 4: Assemble the Salad

  1. In a large bowl, toss together pasta, chopped romaine, cherry tomatoes, Parmesan cheese, and croutons.
  2. Add sliced chicken and drizzle with the Caesar dressing.
  3. Toss gently until evenly coated.

Step 5: Serve & Enjoy!

  1. Garnish with extra Parmesan and parsley.
  2. Serve immediately or chill for 15 minutes before serving for extra flavor.

  • Use Freshly Grated Parmesan – It melts better into the dressing.
