For the Salad:
- 2 cups cooked pasta (rotini, penne, or bowtie)
- 2 grilled chicken breasts, sliced
- 3 cups chopped romaine lettuce
- ½ cup cherry tomatoes, halved (optional)
- ½ cup grated Parmesan cheese
- ½ cup croutons
- 2 tablespoons chopped fresh parsley (optional, for garnish)
For the Caesar Dressing:
- ½ cup mayonnaise (or Greek yogurt for a lighter option)
- ¼ cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 garlic clove, minced
- ½ teaspoon black pepper
- 2 tablespoons olive oil
Instructions
Step 1: Cook the Pasta
- Bring a pot of salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Drain, rinse with cold water, and set aside.
Step 2: Cook the Chicken
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes per side, until golden brown and cooked through.
- Let rest for 5 minutes, then slice into strips.
Step 3: Make the Caesar Dressing
- In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, garlic, black pepper, and olive oil until smooth.
Step 4: Assemble the Salad
- In a large bowl, toss together pasta, chopped romaine, cherry tomatoes, Parmesan cheese, and croutons.
- Add sliced chicken and drizzle with the Caesar dressing.
- Toss gently until evenly coated.
Step 5: Serve & Enjoy!
- Garnish with extra Parmesan and parsley.
- Serve immediately or chill for 15 minutes before serving for extra flavor.
