For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ½ cup buttermilk (or regular milk with 1 teaspoon lemon juice)
  • 1½ cups fresh or frozen cherries, pitted and halved
  • ½ cup sliced almonds

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon almond extract

Instructions

Step 1: Prepare the Oven & Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Step 3: Cream the Butter & Sugar

  1. In a large bowl, beat the butter and sugar until light and fluffy (about 2 minutes).
  2. Add the eggs, almond extract, and vanilla extract, mixing well.

Step 4: Combine Wet & Dry Ingredients

  1. Add half of the dry ingredients to the butter mixture and mix.
  2. Pour in the buttermilk and mix until combined.
  3. Add the remaining dry ingredients and stir until just combined.

Step 5: Fold in Cherries & Almonds

  1. Gently fold in the cherries and sliced almonds, reserving some almonds for topping.

Step 6: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Sprinkle with reserved sliced almonds.
  3. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 7: Drizzle with Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar, milk, and almond extract.
  2. Drizzle over the cooled bread for a sweet finishing touch.

Notes

  • Use Fresh or Frozen Cherries – If using frozen, don’t thaw them before adding to the batter.
  • Prevent Sinking Cherries – Toss them in 1 tablespoon of flour before folding them in.
  • Don’t Overmix – Mix just until combined to keep the bread tender.
  • Almond Flavor Boost – Add 1 tablespoon of almond paste for extra almond goodness.
