For the Casserole:

  • 1 ½ lbs fresh green beans, trimmed and cut into bite-sized pieces (or 2 cans, drained)
  • 1 tbsp butter
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, finely chopped (optional)
  • 1 can (10.5 oz) cream of mushroom soup (or homemade)
  • 1 cup heavy cream or whole milk
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese

For the Topping:

 

  • 1 cup crispy fried onions
  • ½ cup shredded cheese (cheddar or mozzarella)

Instructions

1. Prepare the Green Beans:

  • Bring a large pot of salted water to a boil. Add green beans and cook for 5 minutes until slightly tender but still crisp.
  • Drain and rinse with cold water to stop cooking. Set aside.

2. Make the Cheesy Sauce:

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a large skillet, melt butter over medium heat.
  • Add onions and mushrooms, cooking for 4-5 minutes until soft.
  • Stir in garlic and cook for 30 seconds until fragrant.
  • Pour in the cream of mushroom soup, heavy cream, and Worcestershire sauce, stirring well.
  • Season with salt, pepper, and paprika.
  • Stir in shredded cheddar and Parmesan cheese until melted and creamy.

3. Assemble and Bake:

  • Add the cooked green beans to the cheese sauce and stir to coat.
  • Transfer the mixture to the prepared baking dish.
  • Sprinkle the top with shredded cheese and crispy fried onions.
  • Bake uncovered for 20-25 minutes, until bubbly and golden.

4. Serve and Enjoy!

  • Let the casserole cool for a few minutes before serving.
  • Pair it with roasted meats or enjoy as a delicious standalone side!

Notes

Use Fresh Green Beans – They give the best texture, but canned or frozen work in a pinch.
