Ingredients
For the Casserole:
- 1 ½ lbs fresh green beans, trimmed and cut into bite-sized pieces (or 2 cans, drained)
- 1 tbsp butter
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup mushrooms, finely chopped (optional)
- 1 can (10.5 oz) cream of mushroom soup (or homemade)
- 1 cup heavy cream or whole milk
- 1 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
For the Topping:
- 1 cup crispy fried onions
- ½ cup shredded cheese (cheddar or mozzarella)
Instructions
1. Prepare the Green Beans:
- Bring a large pot of salted water to a boil. Add green beans and cook for 5 minutes until slightly tender but still crisp.
- Drain and rinse with cold water to stop cooking. Set aside.
2. Make the Cheesy Sauce:
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, melt butter over medium heat.
- Add onions and mushrooms, cooking for 4-5 minutes until soft.
- Stir in garlic and cook for 30 seconds until fragrant.
- Pour in the cream of mushroom soup, heavy cream, and Worcestershire sauce, stirring well.
- Season with salt, pepper, and paprika.
- Stir in shredded cheddar and Parmesan cheese until melted and creamy.
3. Assemble and Bake:
- Add the cooked green beans to the cheese sauce and stir to coat.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the top with shredded cheese and crispy fried onions.
- Bake uncovered for 20-25 minutes, until bubbly and golden.
4. Serve and Enjoy!
