Ingredients

  • 1 small head of cauliflower (or 3 cups riced cauliflower)
  • 2 eggs
  • ½ cup breadcrumbs (or almond flour for a low-carb option)
  • ½ cup shredded Parmesan or cheddar cheese (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for smokiness)
  • 2 tablespoons chopped parsley (or cilantro)
  • 2 tablespoons olive oil (for frying)

For Dipping (Optional):

  • Greek yogurt with lemon juice
  • Garlic aioli
  • Spicy sriracha mayo

Instructions

Step 1: Prepare the Cauliflower

  1. Steam or boil cauliflower florets for 5 minutes, until soft.
  2. Drain and pat dry, then pulse in a food processor until finely chopped (or grate by hand).

Step 2: Make the Patty Mixture

  1. In a mixing bowl, combine cauliflower, eggs, breadcrumbs, cheese, garlic powder, salt, pepper, paprika, and parsley.
  2. Mix well until a sticky dough forms. If too wet, add more breadcrumbs.

Step 3: Shape the Patties

  1. Scoop about 2 tablespoons of mixture and shape into small patties.
  2. Place on a parchment-lined tray and let rest for 5 minutes.

Step 4: Cook Until Crispy

  1. Heat olive oil in a skillet over medium heat.
  2. Cook patties for 3-4 minutes per side, until golden brown and crispy.

Step 5: Serve & Enjoy!

  1. Serve warm with your favorite dipping sauce and enjoy!

Notes

Squeeze Out Excess Moisture – Dry cauliflower ensures crispy patties.
For Extra Flavor – Add fresh herbs like basil or oregano.
