Ingredients
- 1 small head of cauliflower (or 3 cups riced cauliflower)
- 2 eggs
- ½ cup breadcrumbs (or almond flour for a low-carb option)
- ½ cup shredded Parmesan or cheddar cheese (optional, for extra flavor)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for smokiness)
- 2 tablespoons chopped parsley (or cilantro)
- 2 tablespoons olive oil (for frying)
For Dipping (Optional):
- Greek yogurt with lemon juice
- Garlic aioli
- Spicy sriracha mayo
Instructions
Step 1: Prepare the Cauliflower
- Steam or boil cauliflower florets for 5 minutes, until soft.
- Drain and pat dry, then pulse in a food processor until finely chopped (or grate by hand).
Step 2: Make the Patty Mixture
- In a mixing bowl, combine cauliflower, eggs, breadcrumbs, cheese, garlic powder, salt, pepper, paprika, and parsley.
- Mix well until a sticky dough forms. If too wet, add more breadcrumbs.
Step 3: Shape the Patties
- Scoop about 2 tablespoons of mixture and shape into small patties.
- Place on a parchment-lined tray and let rest for 5 minutes.
Step 4: Cook Until Crispy
- Heat olive oil in a skillet over medium heat.
- Cook patties for 3-4 minutes per side, until golden brown and crispy.
Step 5: Serve & Enjoy!
- Serve warm with your favorite dipping sauce and enjoy!

Squeeze Out Excess Moisture – Dry cauliflower ensures crispy patties.
