Ingredients
For the Toast:
- 2 slices sourdough or whole-grain bread – A sturdy base for all the toppings.
- 1 large ripe avocado – Mashed to creamy perfection.
- 1 teaspoon lemon juice – Keeps the avocado fresh and bright.
- Salt & black pepper, to taste – Enhances the flavors.
For the Egg:
- 2 eggs – Fried to your preferred doneness (runny, medium, or fully cooked).
- 1 teaspoon olive oil or butter – For frying the eggs to crispy perfection.
Toppings (Optional, but Recommended!):
- Cherry tomatoes, halved – Adds a burst of freshness.
- Red pepper flakes – A little heat for extra flavor.
- Crumbled feta cheese – A salty, tangy touch.
- Microgreens or arugula – A fresh, peppery finish.
- Everything bagel seasoning – For that extra crunch and flavor.
Instructions
Step 1: Prepare the Avocado Mash
- In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth but slightly chunky.
Step 2: Toast the Bread
- Toast both slices of bread until golden and crispy.
Step 3: Fry the Eggs
- Heat olive oil or butter in a nonstick skillet over medium heat.
- Crack the eggs into the skillet and cook for 3-4 minutes until the whites are set but the yolks remain runny. For a firmer yolk, cook for an additional 1-2 minutes.
Step 4: Assemble the Toast
- Spread a generous layer of mashed avocado over each slice of toast.
- Top with the fried egg and season with a pinch of salt and black pepper.
Step 5: Add Toppings & Serve
- Sprinkle with red pepper flakes, crumbled feta, microgreens, or everything bagel seasoning.
- Add a handful of cherry tomatoes on top or on the side for extra freshness.
- Serve immediately and enjoy!
