For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the Alfredo Sauce:

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Cajun seasoning (optional, for extra spice)
  • ¼ teaspoon red pepper flakes (optional)

For the Pasta:

  • 12 oz fettuccine pasta
  • ½ cup reserved pasta water (if needed to thin the sauce)

For Garnish:

  • 2 tablespoons fresh parsley, chopped
  • Extra Parmesan cheese
  • Lemon wedges (optional)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook fettuccine pasta according to package instructions until al dente.
  3. Reserve ½ cup pasta water, then drain and set aside.

Step 2: Cook the Cajun Chicken

  1. Season chicken breasts with Cajun seasoning, salt, and black pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear chicken for 5-6 minutes per side, until golden brown and cooked through.
  4. Remove from heat, let rest for 5 minutes, then slice into strips.

Step 3: Make the Alfredo Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add garlic and sauté for 30 seconds, until fragrant.
  3. Pour in heavy cream, whisking constantly.
  4. Stir in Parmesan cheese, salt, black pepper, and Cajun seasoning.
  5. Simmer for 2-3 minutes, stirring until smooth.

Step 4: Combine Everything

  1. Add cooked pasta to the sauce, tossing to coat.
  2. If the sauce is too thick, add reserved pasta water a little at a time.
  3. Top with sliced Cajun chicken.

Step 5: Serve & Enjoy!

  1. Garnish with fresh parsley, extra Parmesan, and red pepper flakes.
  2. Serve hot with garlic bread or a side salad.

Notes

  • Use Fresh Parmesan – Pre-grated cheese won’t melt as smoothly.
  • Don’t Overcook the Chicken – It should be juicy and tender.
  • For Extra Spice – Add a pinch of cayenne pepper or hot sauce.
  • For a Lighter Version – Use half-and-half instead of heavy cream.
