For the Bread:

  • 2 cups all-purpose flour

  • 1 tbsp granulated sugar

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • ½ tsp garlic powder (optional, for extra flavor)

  • ¼ tsp black pepper

  • 1½ cups shredded sharp cheddar cheese

  • 3 tbsp chopped fresh chives

  • 1¼ cups buttermilk

  • 1 large egg

  • ¼ cup unsalted butter, melted and slightly cooled

For Topping (Optional):

  • ¼ cup extra shredded cheddar cheese

  • 1 tbsp chopped chives

  • 1 tbsp melted butter for brushing


Instructions

Step 1: Preheat & Prepare Pan
Preheat your oven to 350°F (175°C).
Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, garlic powder, and black pepper.
Stir in the shredded cheddar cheese and chopped chives until evenly coated. This prevents them from sinking during baking.

Step 3: Mix Wet Ingredients
In a separate bowl or measuring jug, whisk together buttermilk, egg, and melted butter until well combined.

Step 4: Combine Wet and Dry Mixtures
Pour the wet ingredients into the dry ingredients.
Use a spatula to gently fold the mixture just until combined. Do not overmix—this ensures a soft texture.

Step 5: Transfer to Pan and Top
Spoon the batter into the prepared loaf pan and smooth the top.
If desired, sprinkle extra cheese and chives on top for a beautiful, flavorful crust.

Step 6: Bake the Bread
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
If the top browns too quickly, tent loosely with foil during the last 10 minutes.

Step 7: Cool and Serve
Remove the bread from the oven and allow it to cool in the pan for 10 minutes.
Transfer to a wire rack, brush with melted butter if using, and let cool completely or serve slightly warm.
