For the Blueberry Swirl:

  • 1 ½ cups fresh or frozen blueberries
  • ¼ cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch + 1 tablespoon water

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • ½ teaspoon vanilla extract

For the Cake Batter:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • ½ cup milk

Instructions

Step 1: Make the Blueberry Swirl

  1. In a saucepan over medium heat, combine blueberries, sugar, and lemon juice.
  2. Cook for 3-5 minutes, stirring occasionally until the berries soften.
  3. Mix cornstarch with water and stir it into the blueberries. Simmer for another 1-2 minutes until thickened.
  4. Remove from heat and let cool.

Step 2: Make the Cheesecake Filling

  1. In a mixing bowl, beat cream cheese and sugar until smooth.
  2. Add egg and vanilla extract, mixing until creamy. Set aside.

Step 3: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round or bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs, one at a time, then mix in vanilla extract, sour cream, and milk.
  5. Gradually add dry ingredients, mixing until just combined.

Step 4: Assemble the Cake

  1. Pour half of the cake batter into the pan.
  2. Spoon cheesecake filling evenly over the batter.
  3. Drop spoonfuls of blueberry sauce over the cheesecake layer.
  4. Add the remaining cake batter on top, then swirl with a knife for a marbled effect.

Step 5: Bake & Cool

  1. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Step 6: Serve & Enjoy

  1. Dust with powdered sugar or drizzle with blueberry glaze for extra indulgence!

Notes

  • Use Fresh or Frozen Blueberries – No need to thaw frozen berries before cooking.
  • Don’t Overmix the Batter – Mix until just combined for a tender cake.
