Ingredients

1 (16 oz) tube refrigerated biscuits (or use homemade!)

1 lb breakfast sausage (pork or turkey)

1 (26–30 oz) bag frozen hashbrowns (shredded or diced)

1 ½ cups shredded cheddar cheese

6 large eggs

1 cup milk

Salt & pepper, to taste
For the Gravy:

¼ cup butter
-
¼ cup all-purpose flour
-
2 ½ cups milk
-
½ tsp garlic powder
-
Salt & lots of black pepper (to taste)
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13” baking dish and set aside.
In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess grease and set aside.
In the same skillet, melt butter. Whisk in flour and cook for 1–2 minutes to form a roux. Slowly whisk in milk. Add garlic powder, salt, and lots of black pepper. Simmer until thickened. Stir in cooked sausage.
Cut biscuits into quarters and scatter in the bottom of the baking dish. Top with hashbrowns, then sprinkle with shredded cheese.
In a bowl, whisk together eggs and milk. Season with a pinch of salt and pepper. Pour evenly over the hashbrowns and biscuits.
Spoon the sausage gravy over the top of the casserole.
Bake uncovered for 35–45 minutes or until the eggs are set, the top is golden, and the edges are bubbling.
Let cool for a few minutes before slicing. Serve warm with hot sauce, fresh parsley, or extra gravy on the side.
Notes
Cut Biscuits Small – So they bake through evenly and get golden on top.
Use Shredded Hashbrowns – They mix in easier and create a crispier texture.
Make It Ahead – Assemble the night before and bake fresh in the morning.
