Ingredients

Scale
  • 1 lb fresh salmon, skin removed – You can also use canned salmon (drained).
  • 1/2 cup breadcrumbs – Helps bind the meatballs together.
  • 1 egg – Adds structure and moisture.
  • 1/4 cup grated Parmesan cheese – For extra flavor and a slight crisp.
  • 2 tablespoons Greek yogurt – Keeps the meatballs tender.
  • 1 tablespoon Dijon mustard – Adds a subtle tang.
  • 1 teaspoon garlic powder – A savory boost.
  • 1 teaspoon onion powder – Complements the salmon’s natural sweetness.
  • 1 teaspoon lemon zest – Brightens up the flavors.
  • 1/2 teaspoon salt – Enhances the taste.
  • 1/4 teaspoon black pepper – Just the right amount of spice.
  • 1 tablespoon fresh parsley, chopped – For freshness.
  • 1 tablespoon olive oil – Lightly brushed for baking.

Creamy Avocado Sauce Ingredients

  • 1 ripe avocado – The star of the sauce.
  • 1/4 cup Greek yogurt – Makes it creamy and tangy.
  • 1 tablespoon fresh lemon juice – Adds brightness.
  • 1 teaspoon garlic powder – Balances the richness.
  • 2 tablespoons olive oil – For a smooth consistency.
  • Salt and pepper, to taste
  • 2 tablespoons water – Adjust as needed for desired texture.

Instructions

Step 1: Prepare the Salmon Meatball Mixture

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. If using fresh salmon, pulse it in a food processor until finely chopped (or mince with a knife).
  3. In a bowl, combine chopped salmon, breadcrumbs, egg, Parmesan, Greek yogurt, Dijon mustard, garlic powder, onion powder, lemon zest, salt, pepper, and parsley.
  4. Mix until well combined.

Step 2: Form and Bake the Meatballs

  1. Using a cookie scoop or hands, form the mixture into 1-inch meatballs and place them on the baking sheet.
  2. Lightly brush the meatballs with olive oil for a golden finish.
  3. Bake for 15-18 minutes, or until they are cooked through and slightly golden.

Step 3: Make the Creamy Avocado Sauce

  1. In a blender, combine avocado, Greek yogurt, lemon juice, garlic powder, olive oil, salt, and pepper.
  2. Blend until smooth, adding water gradually to reach your desired consistency.

Step 4: Serve and Enjoy!

  1. Drizzle or dip the baked salmon meatballs in the creamy avocado sauce.
  2. Garnish with extra parsley and a squeeze of fresh lemon juice.

Notes

  • Use fresh salmon if possible – It makes the meatballs more tender.
  • For extra crispiness, broil the meatballs for the last 2 minutes of baking.
  • Adjust the sauce consistency – Add a little more water for a drizzle-able sauce or keep it thick for dipping.
  • Make it dairy-free – Swap Greek yogurt with a plant-based alternative.
