Instructions
Step 1: Prepare the Salmon Meatball Mixture
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- If using fresh salmon, pulse it in a food processor until finely chopped (or mince with a knife).
- In a bowl, combine chopped salmon, breadcrumbs, egg, Parmesan, Greek yogurt, Dijon mustard, garlic powder, onion powder, lemon zest, salt, pepper, and parsley.
- Mix until well combined.
Step 2: Form and Bake the Meatballs
- Using a cookie scoop or hands, form the mixture into 1-inch meatballs and place them on the baking sheet.
- Lightly brush the meatballs with olive oil for a golden finish.
- Bake for 15-18 minutes, or until they are cooked through and slightly golden.
Step 3: Make the Creamy Avocado Sauce
- In a blender, combine avocado, Greek yogurt, lemon juice, garlic powder, olive oil, salt, and pepper.
- Blend until smooth, adding water gradually to reach your desired consistency.
Step 4: Serve and Enjoy!
- Drizzle or dip the baked salmon meatballs in the creamy avocado sauce.
- Garnish with extra parsley and a squeeze of fresh lemon juice.
Notes
- Use fresh salmon if possible – It makes the meatballs more tender.
- For extra crispiness, broil the meatballs for the last 2 minutes of baking.
- Adjust the sauce consistency – Add a little more water for a drizzle-able sauce or keep it thick for dipping.
- Make it dairy-free – Swap Greek yogurt with a plant-based alternative.
