Instructions
Step 1: Preheat & Prep
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with oil.
- Wash and scrub russet potatoes, then cut into even wedges (about 8 wedges per potato).
Step 2: Season the Potatoes
- In a large bowl, toss potato wedges with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and Italian seasoning.
- Sprinkle grated Parmesan cheese over the wedges and toss again to coat.
Step 3: Bake the Potato Wedges
- Arrange wedges skin-side down on the prepared baking sheet, making sure they don’t overlap.
- Bake for 35-40 minutes, flipping halfway, until golden brown and crispy.
Step 4: Serve & Enjoy!
- Garnish with fresh parsley and extra Parmesan cheese.
- Serve hot with your favorite dipping sauce.
Notes
- Use Russet Potatoes – They have the best texture for crispy wedges.
- Soak in Water First – Soaking the potatoes for 30 minutes removes excess starch, making them crispier.
- Don’t Overcrowd the Pan – Space out wedges to allow them to crisp up.
- For Extra Crispiness – Bake for an additional 5 minutes under the broiler.
