For the Apple Rings:

  • 2 large apples (Honeycrisp, Fuji, or Gala work well)

  • 1 tbsp lemon juice (to prevent browning)

  • Extra cinnamon sugar for sprinkling (optional)

For Cooking:

  • Butter or oil, for the pan

Notes

Step 1: Prepare the Apples
Wash and core the apples using an apple corer or small round cutter.
Slice them into ¼-inch thick rings.
Place the rings in a bowl and toss with lemon juice to keep them fresh.

Step 2: Make the Batter
In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, combine milk, egg, melted butter, and vanilla.
Pour the wet ingredients into the dry and stir until just combined—do not overmix. The batter should be slightly thick.

Step 3: Preheat the Skillet
Heat a non-stick skillet or griddle over medium heat.
Add a little butter or oil to coat the surface.

Step 4: Dip & Cook the Apple Rings
Dip each apple ring into the pancake batter, coating both sides. Let any excess batter drip off.
Place the coated apple rings onto the hot skillet.
Cook for 2–3 minutes on each side until golden brown and puffed.
Repeat with remaining apple rings, adding more butter or oil to the skillet as needed.

Step 5: Serve Warm
Stack the apple ring pancakes and serve with a dusting of powdered sugar or a drizzle of maple syrup.
Top with a dollop of Greek yogurt, whipped cream, or chopped nuts for added texture and flavor.
